Curried Rice (Microwave)

Serves 4

Recipe designed for preparation in microwave oven.


2 tbsp peanut oil
2 onions, finely chopped
1 cup basmati rice
2 small bay leaves
2 whole cloves
Seeds from 4 cardamom pods
2-3 tbsp mild curry powder
1 tsp salt
2 1/2 cups boiling water or vegetable stock


Put the oil in a 10-cup dish. Heat, uncovered, on Full for 1 minute. Mix in the onions. Cook, uncovered, on Full for 5 minutes. Stir in all the remaining ingredients. Cover with plastic wrap and slit it twice to allow steam to escape. Cook on Full for 15 minutes, turning the dish four times. Allow to stand for 2 minutes. Fork round lightly and serve.

Separate leftover rice into plastic containers by serving size, either a large portion for the family dinner tomorrow night or a single serving for lunch the next day. If you plan to reheat leftovers, store in a plastic container labeled for use in the microwave to save time.    » more
Strong spices can leave a strong odor. To get odors out of your microwave, try mixing 1/2 cup lemon juice with 1 to 2 cups of water, cover and heat on high for approximately 5 minutes. Allow the mixture to cool before removing.    » more
