Chicken, Snow Pea & Almond Salad

Makes 4 Servings




1 cup coarsely chopped cooked roasted chicken, (about 5 ounces) (Hint: Use leftover Thyme Roasted Chicken)

1 cup snow peas, cut into 1/2-inch pieces

1/3 cup of your favorite Asian-style or poppy seed salad dressing

One 10-ounce bag pre-washed romaine salad greens

1 large carrot, peeled and shredded (about 1 cup)

Salt and pepper

1/3 cup slivered almonds, lightly toasted

1/2 cup Mandarin oranges, optional




Place the chicken, snow peas and dressing in a large bowl and toss until the chicken and snow peas are well coated. Add the lettuce and carrots and toss well to combine. Season with salt, pepper, and additional salad dressing as desired to taste. Serve in individual bowls and top with slivered almonds and Mandarin oranges as desired.
