Simple Salmon Noodle Casserole

Makes 3 Servings




One 6-ounce package whole wheat macaroni & cheese (such as Annie’s Homegrown)

1 cup frozen peas, thawed

6 ounces cooked salmon, flaked (Hint: Use leftover Baked Salmon)

1/4 cup 1% lowfat milk

1 tablespoon canola oil




Cook the pasta according to package directions. Drain and set aside. While the pasta is draining, add the oil, milk, and cheese powder to the saucepan and whisk until well blended. Add the pasta, peas, and salmon and mix well. Heat through and serve.

Reheat leftover noodle casserole in the microwave in a single-serving size round or oval dish labeled for use in the microwave. A square or cornered dish tends to allow the corners to overcook. Cover with plastic wrap, leaving one corner open to allow steam to escape.    » more
