Eggplant Parmesan Sandwiches

Makes 6 Servings




One 16-ounce box frozen breaded eggplant cutlets
3/4 cup pasta sauce
3/4 cup pre-shredded reduced-fat Cheddar cheese
6 whole wheat hamburger buns




Preheat the oven to the temperature indicated on the box of eggplant cutlets.  Place the cutlets on a large baking sheet.  Top each evenly with the pasta sauce and cheese.  Cook according to package directions (the cheese will melt as the cutlets cook).  Divide the cutlets evenly between the 6 burger buns and serve.
